The olive tree (Olea europea L.) is one of the longest-lived trees on earth, with a thousand-year life span, and has been cultivated in the Mediterranean region for thousands of years. It owes this characteristic to its excellent plant "immune system", with which it fends off damage from predators such as parasites, microbes and insects. Even the ancient Egyptians therefore used the pressed leaves of the "tree of life" to protect the mummified corpse from parasite infestation.
It was not until the beginning of the 20th century, however, that it was possible to identify the antioxidant that is decisive for this protective function: The bitter substance oleuropein, concentrated mainly in the leaves, which makes up the lion's share of the active substances of the olive leaf. In addition, there are flavonols (olivine, rutin, hesperidin, quercitin), phenols (hydroxytyrosol, caffeic acid) and organic acids.

Olive oil polyphenols help protect blood lipids from oxidative stress.
