By barley grass we mean the young green barley plant (Hordeum vulgare), which later produces cereal grains. Barley grass has a similar nutrient composition as green leafy vegetables, but contains these nutrients in a much higher density. This is likely the reason that barley grass has a long tradition as a valuable food in many cultures. Current scientific findings confirm barley grass as an excellent supplier of vital plant substances such as chlorophyll, antioxidants, flavonoids, proteins, fiber, vitamins and minerals.
