A stable blood glucose level brings many benefits. When glucose is absorbed, the body secretes insulin. In simple terms, insulin is the antagonist of blood glucose. If the blood glucose level rises, insulin ensures that it subsequently falls again. However, since the body cannot estimate how much food is still being consumed, it often releases too much insulin when blood glucose levels rise sharply.
